Stoneman's Famous Sweet Corn and Highland Spring Farm beef - a match made in heaven!
A twist on the classic burger using Stoneman's Famous Sweet Corn. Our family has been growing sweet corn since 1963. I took over the sweet corn business from my grandparents as my summer job during college. All of our corn is picked by hand fresh each day and we sell right out of the garage at the family farm.
Street Corn Burgers - 4 servings
Ingredients
Burgers
1 pound Highland Spring Ground Beef
Hamburger buns
Cheese (we used cheddar and cojack)
Lettuce
Street Corn Salad topping
3 ears of Stoneman's Famous Sweet Corn (grilled or cooked)
1/4 cup mayo
1/4 cup cotija cheese
1 tablespoon cilantro
1 tablespoon lime juice
1/2 tablespoon garlic, minced
1/2 teaspoon chili powder
1/4 teaspoon kosher salt
2-3 tablespoon red onion, diced
grated cotija cheese
Preparation
Preheat the grill to 450-500 degrees.
Husk corn and place on grill for a few minutes per side rotating to get a slight char.
Combine all the street corn salad ingredients in a bowl. Adjust any spices as needed and set aside.
Patty the ground beef into 1/4 lb patties, season with salt and pepper if desired.
Place on the grill for 3-4 minutes per side for medium rare, longer if you like them more done.
If melting cheese on the burger, move to indirect heat and place slices of cheese on the burger for a few moments.
Remove from heat, tent with tinfoil and let rest for 5 minutes to ensure a juicy burger.
Assemble the burgers on the bun and pile the sweet corn salad on top and sprinkle cotija cheese on top.
